What this assumes, and where it could be wrong

The guest count is the biggest lever, and a collection minimum sets the floor. The catering line is per head, and the florals scale with it too, so trimming the list trims the largest part of the bill. The resort's wedding collections carry a guest and spend minimum, so ask where that floor sits before you count heads.
The venue fee swings with the location. A resort ballroom, a poolside deck, a theme-park ceremony and an after-hours event in the park are very different fees, and a park or private-park experience can rival the catering on its own. The fee here is the space and the time; the food is a separate line.
The service charge is not the tip. It is a staffing and administration charge the resort applies to food and beverage as a percent, set by the contract rather than left to you. Ask whether any additional gratuity is expected on top, and get the figure in writing.
Sales tax and the taxable base are set by the contract, not by you. Sales tax applies to the catering, and the contract decides whether the service charge and other lines are taxed as well. The rate here is your own, so confirm the base before you trust the total.
